Heart of palm, likewise known as palm heart, palmito, or even swamp cabbage, occurs as vegetable harvested from a inner core & growing bud of certain palm trees (notably the coconut (Cocos nucifera), açaí (Euterpe edulis), sabal (Sabal spp.) and pejibaye (Bactris gasipaes) palms). These are costly because harvesting kills a tree. Heart of palm is typically dine in the salad sometimes called "millionaire's salad".
